Before we ever send one of our officers to protect a restaurant, we review escort and emergency response procedures one last time. We know that thoroughness is appreciated by the bad guys because when they see a professionally handled escort in progress, they’ll go elsewhere. And prevention is always better than reaction.

But we know that reaction is sometimes required, and most restaurant security details are handled by armed officers.
